Slow-Cooker Cheddar Bacon Beer Dip

Looking for a new beer snack for the World Series? Try this cheddar bacon beer dip with soft pretzel bites.

We made ours with an amber ale from Broadhead Brewing in Ottawa.

We hoped the caramel notes would play well with the spicy pork. And that the crisp finish from the beer, in the chili and our glasses, would help cleanse the palate for the next bite.

It didn’t disappoint.

Other beers can work well, but the recipe’s author suggests steering clear of anything dark.

If you’re making it, you’ll need:

  • 18 ounces of cheese cream, softened
  • ¼ cup sour cream
  • 1-1/2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 cup of amber beer
  • 2 cups shredded cheddar cheeses
  • 1 pound bacon strips, cooked, crumbled and divided
  • ¼ cup heavy whipping cream
  • 1 green onion, thinly slice
  • Soft pretzel bites

The directions couldn’t be easier. Basically, cook the bacon, mix everything in a 3-qt slow cooker, and let cook on low for 3-4 hours, adding the whipping cream near the end. Top with onion, crumbled bacon and last of bacon. Enjoy with pretzel balls or your favorite soft bread.
